Potato Salad - Kyle Treadway

 6 large russet potatoes or equivalent (often they use yukon gold)

12 eggs (hard boiled I assume)

1/4 onion finely minced

1 cup + may to taste

1 tsp each salt & pepper to taste


Boil potatoes to fork tender - smaller the pieces, less time, not too soft


Combine, cover, chill overnight
