Almond Raisin Cauliflower Rice

Ingredients:
2 16oz pkg cauliflower crumbles
3 TBS olive oil
2 cloves garlic, minced
1/2 c sliced almonds
1/2 c golden raisins

1. Preheat oven to 425. Combine cauliflower, oil, and garlic in a roasting pan. Bake 15-20 minutes until browned, stirring once

2. Toast nuts in a dry skillet over medium-high heat 4-6 minutes or until fragrant.  Stir nuts, olives, and raisins into cauliflower mixture before serving.

Cowboy Caviar (Salsa)

Cowboy Caviar

SERVINGS 12 servings

A fresh, simple dip that can be thrown together in under 15 minutes! This Cowboy Caviar makes a great side dish for any picnic, potluck, or party, and is a great way to use up your summer produce!

Ingredients

  • 3 Roma tomatoes seeds removed, diced
  • 2 ripe avocados diced
  • 1/3 cup red onion diced
  • 1 15 oz can black beans rinsed and drained
  • 1 15 oz can black eyed peas rinsed and drained
  • 1 1/2 cups frozen sweet corn thawed (I just usually toss it in the salad frozen unless I plan on eating it immediately, it thaws quite quickly)
  • 1 bell pepper diced (I used half a green and half a red, but color doesn’t matter)
  • 1 jalapeno pepper seeds removed, diced into very small pieces
  •  cup Cilantro finely chopped
DRESSING
  • 1/3 cup olive oil
  • 2 Tablespoons lime juice fresh preferred
  • 2 Tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • Tortilla chips for serving

Instructions

  1. Combine tomatoes, avocado, onion, black beans, black eyed peas, corn, pepper, jalapeno pepper, and cilantro in a large bowl. Toss/stir well so that ingredients are well-combined.
  2. In a separate bowl, whisk together olive oil, lime juice, red wine vinegar, sugar, salt, pepper, and garlic powder.
  3. Pour dressing over other ingredients and stir/toss very well.
  4. Keep refrigerated. If not serving immediately, be sure to toss/stir well before serving.

Nutella Pudding Pie

Ingredients
- Vanilla pudding with a couple of Tbsp cool whip mixed in
- Graham Crackers
- Nutella
- Fruit
- Sliced Toasted Almonds
- Coconut Oil

In a pyrex dish, line up graham crackers to cover bottom
Spread pudding over graham crackers
another layer of graham crackers
another layer of pudding
another layer of graham crackers
Melt Nutella with a little coconut oil, spread over graham crackers
Add fruit and sliced almonds

Chile verde with chicken and white beans

Sauté onions and half of a poblano pepper; add 1 cup dry white beans and water to cover the beans a bit. Manual, high pressure, 15 minutes. Quick release. Add 1 pound chicken thighs, the other half of the poblano, any vegetable extras, and half of a jar of salsa if you want. Manual, high pressure, 20 minutes more. Quick release if you’re hungry, natural if you forget about it. —Tim Barribeau

Soy sauce chicken

Optional: Brown whole chicken in oil on Sauté. 
Add:
  • 4 cloves garlic
  • 2 star anise
  • 1 cinnamon stick
  • 2 inches of ginger sliced
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 4 cups water
Manual, high pressure, 25 minutes. Quick release pressure.

American-style chicken and vegetables

Sauté (or simply add to the pot if you’re short on time) about 4 cups’ worth of veggies cut to roughly equal-size chunks with a drizzle of oil and salt and pepper. Potatoes, carrots, celery, mushrooms, onions, and garlic are all good options. Layer about 4 pounds of chicken leg quarters on top (thighs and breasts also work well, with or without bones), along with more salt and pepper and an optional bay leaf or other herbs if you’d like. Manual, high pressure, 20 minutes (15 minutes if using boneless chicken). Natural release until it opens on its own (about 20 minutes). Optional: Garnish with chopped parsley.

Variation 1, chicken and rice: Add 2 cups of rice and about 2 cups of chicken stock or other liquid (make 1 cup of it cream if you like it creamy).
Variation 2, Instant Pot coq au vin: Make the main recipe but add about 4 slices of bacon, chopped, to your sauté mix. Add a few glugs of red wine (up to half the bottle). Follow the same pressure instructions. —Jacqui Cheng

Tomato soup

Sauté about 6 cloves of smashed garlic with a roughly chopped onion. Add 2 cans of whole tomatoes and their liquid and seasonings (oregano, thyme, salt). Manual, high pressure, 10 minutes. Quick or natural release. Blend with an immersion blender until smooth. Add fresh herbs, salt, and pepper to taste. —Courtney Schley
